Rant: I'm not sold on the whole 'Texas brisket is the only real brisket' thing anymore.

I used to believe that, but after eating at Rodney Scott's place in Charleston last year, my view changed. His whole hog style, with that vinegar-based sauce and smoky pork, showed me how much flavor and texture can come from a different animal and method. It made me realize focusing only on one cut in one style really limits what barbecue can be. Has anyone else had a similar experience that made them question a big barbecue rule?

Ever notice how people get weirdly tribal about the most random stuff, like coffee or pizza styles?

Right, like we need more reasons to fight over food.

Yeah, the "only real brisket" rule is just a good way to miss out on great food. It's like saying the only real sandwich is a PB&J. Once you try other stuff, you realize how silly that sounds.
