Rant: guy at the Fort Worth stock show judged my brisket before he even tasted it
I watched him poke the flat with his finger, look at the bark, and say 'you wrapped too early, son' without ever pulling a slice, and I am still mad about it three weeks later, so has anyone else dealt with a judge who decides from looks alone?
Gotta disagree with you here. Poking the flat and checking bark tells a judge a ton before he ever cuts a slice. If your wrap was late the bark goes dark and crusty, and if it was early the flat comes out soft and gray with no pull. A guy who has judged a hundred briskets can feel that with one finger. Now saying it out loud before tasting is rude, I will give you that. But the call itself might have been dead on, and three weeks of mad is a long time to hold onto a poke.
