PSA: My ribs kept coming out chewy no matter what I tried

Tbh, cooking them low and slow for longer did the trick.

How long are you giving them on the heat before you check? Honestly, @shanegibson has a point with the foil wrap, that steam really helps. I used to boil mine for a bit before putting them on the grill, which felt wrong but made them fall apart tender. Maybe try mixing methods, like a slow cook then a tight foil wrap with some liquid. Chewy ribs are the worst, but once you get them soft it's a total game changer.

Ever tried wrapping them in foil partway through? I had the SAME problem until I started doing that. After a few hours on low heat, I wrap them tight in foil with a little apple juice for about an hour. It basically steams them and makes the meat SUPER tender, no chew at all. Then I just take them out, sauce them up, and let them cook uncovered to get sticky.
