PSA: I picked a 14-inch WSM over a pellet grill for my first real smoker and it was the right call.

Take it from someone who started on a basic charcoal kettle, @hugo_nelson hit the nail on the head - the hands-on part is what makes the WSM special. A pellet grill is fine for convenience, but you miss out on that deeper, smokier flavor you only get from managing the burn yourself. Isn't that the whole point of smoking meat anyway?

Okay but is the choice between a WSM and a pellet grill really that big of a deal? One is basically a fancy outdoor oven and the other is a charcoal can. Both just cook meat. The whole "right call" thing feels like making a huge deal out of picking a toaster. People act like you need a degree in fire science to use a WSM. It's just a grill.

I mean, they both cook meat, sure, but that's like saying a bicycle and a car both get you places. The pellet grill runs itself, you set a dial. The WSM needs you to manage the fire, which changes how the smoke flavor turns out. It's the difference between making dinner and actually barbecuing, you know?
