Pro tip: I chose a basic offset smoker over a fancy pellet grill for my first setup in 2010.
It forced me to learn fire management the hard way, but now I can tell a brisket's doneness just by the bark's color. Anyone else start with a simple rig and stick with it?

My first smoker was a cheap offset from a hardware store back in 2008. Honestly, the real learning came from fixing all the leaks with high temp gasket tape before I even worried about fire management. That basic step made a bigger difference than just fighting a bad draft all day.

Man, that's so true. Sealing it up first saves so much headache later.

Oh, I gotta disagree a bit here. Fixing leaks is smart and all, but spending too much time on sealing before you even light a fire can make you overthink things. Jumping into fire management from day one taught me way more about airflow and heat than any tape ever could.
