Pitmasters who wrap in foil at the stall are killing their bark, and I'll die on this hill
I ran two butts side by side at my place in Waco over the weekend, one wrapped tight in foil at 165 and one left naked the entire cook, and the foil one came out with bark the texture of wet bread while the unwrapped one had a shell you could knock on. I get that foil pushes through the stall faster, but is saving 45 minutes really worth losing the one thing people actually judge you on?
