Picked a cheap offset over a pellet rig for my first comp in Memphis, and I've got thoughts
Signed up for my first backyard comp in Memphis last spring and had to pick between a $250 offset stick burner and a $600 pellet grill with maybe three weeks to practice. Went with the cheap offset because I figured if I was gonna learn brisket I should learn fire management the hard way. First cook went terrible, ran hot for two hours and the flat came out like shoe leather, but by week three I had the vent dance down and took 7th out of 22 teams. Now I'm wondering if I just got lucky with the draw or if the stick burner really did teach me faster. Any of you start on a cheap offset and move to pellets later, and did it feel like cheating or just less work?
