Hold on, did you say he brought his own smoker to a block party? That's crazy to me because most pitmasters I know guard their methods like state secrets. For him to just show up and give a free demo is almost too good to be true. It really does make you wonder why more chefs don't do these surprise visits. Stuff like that could change how people cook at home for good.

Chefs sharing tricks in public breaks down the scary wall around pro cooking. Watching live makes people less worried about trying hard recipes at home. More surprise demos could really spark a wave of better home meals.
