I was totally against using a pellet smoker for brisket, but a guy in Kansas City proved me wrong last weekend

That's how it often goes, isn't it? Had a similar experience a few years back with a charcoal smoker and pork shoulder. A friend swore up and down that you had to use a traditional offset smoker for good barbecue, so I got all snobby about it. Then his neighbor came over with a brisket he'd done on a Traeger and it was honestly some of the best I'd ever eaten. Made me rethink everything I thought I knew. Sometimes you just have to let the food speak for itself rather than judging the equipment.

@diana_king I gotta push back a little here. How can you say the equipment doesn't matter when you literally said the Traeger brisket changed your mind? That pellet smoker did something different than the offset, right? I mean, yeah, the food speaks for itself but the tool is part of how it talks. I've had pellet brisket that was tender and sweet but missing that deep smokey bark you get from a stick burner. Different tools, different results.
