Is it really that deep? I see people arguing about this stuff like they're picking a religion. Pellet grills are basically easy mode, you set the temp and go watch the game. Stick burners are for the people who want to make BBQ into a whole afternoon chore. I've seen a guy win a local comp with a $200 offset from a hardware store and another guy flop hard with a $5k Yoder. Maybe just focus on not serving dry meat instead of worrying about what makes the smoke.

Take it from someone who's been there with a bone-dry brisket on a Tuesday night because I got cocky with the temp control. The pellet vs offset debate is mostly just noise. I've learned the hard way that keeping a good meat thermometer in the meat and knowing your cook temps matters way more than the fancy brand or how you make the fire. If you can hold a steady smoke and watch the internal temps, you can turn out solid BBQ from a beat up smoker you found on a curb.
