Hot take: Dropping $250 on a proper remote thermometer for my offset smoker was a game changer after years of guessing.

I always thought checking the pit every 30 minutes was just part of the craft, but seeing the temp swings on the app convinced me I was fighting my fire more than cooking my brisket, so what's your one piece of gear that actually made you better?
