Heard a guy at the Memphis in May contest say he hasn't touched a stick burner since 2015
He was talking to his buddy about how he only uses pellet grills now for consistency. It made me think about how much the competition scene has changed. I miss seeing the old school guys babysitting a fire all night, you know? Does anyone still run a traditional offset at the big contests, or is it all about the set-and-forget tech now?

I saw a team at the Houston Rodeo still using a massive old offset last year.

Exactly! That old gear is the whole point. You can't fake the sound of a real offset press or the smell of the ink. New digital stuff is clean and fast, but it feels like watching a movie. The old machines have a rhythm, a physical thing you can feel in your chest when they're running. That's the real show, not just the final poster.
