Changed my mind about brisket wrapping after 3 years of foil

I was a hardcore foil guy for 3 years until last month when a pitmaster in Lockhart told me to try butcher paper at a competition. My brisket came out way more tender with a better bark, and I felt stupid for ignoring it so long. Anyone else have a method they swore by until someone proved them wrong?

Honestly, your "felt stupid for ignoring it so long" part really hit me because I had the exact same moment switching from pork butt wrap methods. It's humbling when someone casually drops knowledge that changes everything you thought you knew about smoking meat. That Lockhart pitmaster did you a solid though, butcher paper really is a game changer on bark.

Paper is the way to go once you try it you never go back. That bark difference is night and day.
