Bought a fancy pellet grill thinking it would make me a pitmaster overnight

I dropped $800 on a high end pellet grill last spring, convinced it was the magic bullet for competition level brisket. The sales guy said it would hold temp perfectly and give me that 'real smoke flavor' with zero effort. Let me tell you, after six months of dry, bland meat, I realized I was just paying for an expensive oven. The smoke it produced was so light my pork butts tasted like they were cooked in a kitchen, not a pit. I wasted probably $200 on meat alone trying to make it work before I finally admitted defeat. The worst part was the false confidence it gave me; I thought the gear was doing the work for me. Now I'm back to my old offset smoker, actually learning fire management. Has anyone else fallen for the pellet grill hype and been let down?

Remember when those air fryers were the big thing? I got one thinking it would change how I cooked everything. Used it twice and now it just takes up space in the cabinet. Sometimes the fancy tool just makes you forget you still have to learn the basics. My husband still makes better fries in a pot of oil on the stove. I guess some things just need the old way to work right.

Totally get what you mean, angela_allen53... some kitchen gadgets just make more dirty dishes than good food.
