Why does nobody talk about oven temp swings on cheap stoves

I used to just set my oven to 350 and throw my cookies in, thinking they'd bake even. Then I got a $15 oven thermometer last month after my batch came out burnt on one side and raw on the other. Turns out my oven jumps 25 degrees every 10 minutes, and I was basically playing roulette with every tray. Since I started checking the temp every batch, my cookies come out consistent for the first time ever. Has anyone else had their oven lie to them this bad?

My buddy ruined a whole Thanksgiving turkey once because his oven was running 50 degrees cold, and he never would've known if his sister hadn't brought over a thermometer.

50 degrees cold? @gibson.mark sounds like he was baking a turkey, not defrosting one lol.
