Warning: I just hit batch number 100 on my sourdough starter and the results were a total shock.

After 100 feedings, my starter finally produced a loaf that didn't look like a sad pancake, so has anyone else had a specific batch number where everything just clicked?

That "sad pancake" stage is real. Mine turned a corner around batch 80 when I finally stopped fussing with the water temperature so much.

Oh man, that sounds rough. I had a similar thing where my starter just would not rise for weeks. I was so sure I was killing it with a cold kitchen. Turns out I was overthinking it too.
