Spent $120 on a fancy bread proofer that barely works better than my oven's pilot light

Wow, that's a bummer for $120. I'd try putting a pan of hot water in the bottom of your oven next time, it does the same thing a proofer does for free. You can also just leave your dough on top of the fridge or near a sunny window to rise.

Respectfully, I gotta disagree a bit. A pan of hot water works ok but it's not really the same thing - the humidity and steady temp a proofer gives you matters more than people think, especially if your kitchen runs cold or drafty. For $120 it's definitely pricey but if you bake a lot it can be worth it just for consistency.
