Shoutout to the day I forgot to add sugar to a birthday cake
I was making a double-layer chocolate cake for my sister's 30th back in March, and I totally spaced on the sugar. Like, I mixed everything else perfectly (flour, eggs, cocoa, the works) and even had my timer set for 35 minutes. The cake came out looking beautiful, all tall and fluffy. But when I cut into it, it was this super bitter, sad mess that nobody wanted to eat. My sister took one bite and made this face (you know the one) and said "Did you forget something?" I had to run to the store at like 8 PM and start over from scratch. Has anyone else had a brain fart that ruined a whole batch of something?

My husband used to always say people who baked professionally were just showing off, but then I saw this exact thing happen to my niece at her daughter's first birthday party last July. She had this gorgeous strawberry cake that fell completely flat taste-wise because she forgot the vanilla extract. I used to think baking mistakes were just funny stories but watching a room full of toddlers spit out cake because it tasted like cardboard with sweet strawberries really changed my mind about how careful you gotta be with measurements. It's not just about making it look pretty, every single ingredient is doing something important even if it seems small. Now I actually weigh my dry ingredients and everything because I don't want to be that person again.

Not gonna lie @amy975 but I think y'all are making this way deeper than it needs to be. Yeah it sucks when a cake flops but it's literally just a cake. Nobody died, nobody got hurt, you just had a funny story and a trip to the store at 8 PM. Baking is science sure but it's not rocket science. A little bitter chocolate cake isn't the end of the world especially when you can just laugh it off and try again. Feels like people stress way too much over perfect ingredients and scales when honestly most of us can't even tell the difference half the time.

Forgot the salt in a batch of chocolate chip cookies once. They looked perfect, golden brown, but they tasted like sweet paste. My neighbor still brings it up every time I bring food to a barbecue.
