Question about using a stand mixer for bread dough

I tried using my KitchenAid on a high hydration sourdough recipe from a book... it just climbed the hook and never really kneaded. I learned you need to keep it on a lower speed for that wet of a dough, or just use your hands. Anyone have a mixer model that actually handles sticky dough well?

My KitchenAid handles wet dough just fine on speed two.

Yeah, that climbing the hook thing is so real... my old KitchenAid did that all the time. I switched to an Ankarsrum for my high hydration doughs and it's a total game changer. It uses a roller and bowl instead of a hook, so it actually pulls the dough.

Wait, the Ankarsrum doesn't have a hook at all, it uses a roller that spins against the bowl wall. That's actually what keeps the dough from climbing, lol.
