PSA: I just read in a library book from 1982 that you can over-knead dough in under 5 minutes with a modern stand mixer, which goes against the 'more is better' advice I always see.

Has anyone else had a loaf turn into a dense brick because the recipe kneading time was way too long for their machine's power?

Oh man, my friend just had that happen! Her mixer turned a whole batch of rolls into tough little rocks.

Sounds like your friend's mixer went into bread weapon mode, Elizabeth. My old one did that once, turned cookie dough into something you could patch a wall with. I had to check the speed settings because it basically just beat the life out of everything.
