Pie crust at the county fair, I get it now
Went to the county fair last Saturday and watched a lady in her 70s roll out pie dough on a folding table. She used a beat-up glass bottle, no rolling pin, and her crust came out paper thin without cracking once. I've been fighting my dough for 5 years, always adding more water or chilling it longer. She told me to stop overthinking and just work fast with cold butter, then she let me try a scrap piece. I baked a chicken pot pie last night using her method and it actually held together. Anyone else learn more from watching someone at a fair than from a whole cookbook?
