Precision is everything in baking. My old cheap scale was off by like five grams, which is huge for salt or baking powder. Now my bread actually rises and my shortbread has the right snap. It's not a fancy gadget, it's a basic tool that fixes so many fails.

Oh man, that's the truth. I had the same problem with a scale that was just a little off. My cookies kept spreading into one giant flat mess because the flour was off. Got a decent digital one for like twenty bucks, and now my stuff actually turns out right. It's wild how such a small error can ruin a whole batch.
