Custard was perfect at 2am, then ruined by sunrise
Stayed up baking a creme brulee for my sister's brunch, and the torch ran out of fuel after the first ramekin. By the time I found the backup canister, the custard had sweated all over the counter and turned soupy. Anyone else had a late-night bake fall apart just from the wait?
My buddy Dave tried making a flan for his wife's birthday last month. He pulled it out of the oven at like 11pm, then realized he had to let it cool for two hours before it could go in the fridge. He fell asleep on the couch around midnight and woke up at 6am to a puddle of caramel and eggs sitting on the stove. Said it looked like something died in that pan.
