TIL soaking beans overnight isn't just for old-school cooks
Honestly I used to think soaking dried beans was some old-fashioned step nobody actually needed. I'd just throw them in the pot with water and simmer for hours, always ended up with some beans that were still hard in the middle. A friend from my grandma's generation told me to try an overnight soak with a pinch of baking soda, just 1/2 teaspoon for a pound of beans. Did that last Saturday with a bag of black beans for soup, and they cooked in about 45 minutes flat. All those years I was making things harder on myself for no reason. Anybody else skip soaking forever then realize it actually saves time?

Ah actually beans are supposed to be soft not crunchy if you soak them right, no?
