Pro tip: watched a grandma in Little Italy make pasta sauce with just 4 things and it beat my 9 ingredient version
Honestly I was at my aunt's place in Cleveland's Little Italy last Saturday for a family thing, and her neighbor Rosa, who is 78, was in the backyard making sauce in this old dented pot. I asked her what she puts in it and she looked at me like I was nuts. Four things: canned tomatoes, one onion cut in half, a stick of butter, and salt. That's it. No garlic, no basil, no sugar, no wine, no tomato paste, none of the stuff I throw in. She let it sit on low for about 3 hours with the lid cracked and stirred it maybe 4 times the whole afternoon. I tasted it and ngl it was better than mine, and I've been messing with my recipe for like 2 years. She said the trick is you don't mess with it, and you pull the onion out at the end. I went home and did the same thing Sunday with a $2 can of tomatoes and it worked. Has anyone here gone backwards like this and cut stuff out instead of adding more?
