I used to toss all my veggie scraps straight in the trash, now I keep a bag in the freezer for broth

For like 5 years I'd just chuck onion skins and carrot tops without thinking twice, but last month after watching a lady at the farmers market fill a whole pot with scraps I decided to try it. Now every Sunday I boil a big bag of frozen scraps with some salt and pepper and end up with free stock that tastes way better than the canned stuff. Anyone else do this or am I just late to the party?

Are you telling me I've been tossing money in the trash for years? I literally just threw away a bag of celery leaves yesterday like some kind of MONSTER. Now I'm picturing all those sad potato peels I could've turned into gold. I'm about to start hoarding veggie scraps like a dragon with treasure.

Wait, are you sure potato peels are actually good for stock? I thought they can make it bitter and cloudy if you boil them too long.
