I finally figured out why my pancakes were always flat

Turns out I was letting the batter sit too long after mixing, like 10-15 minutes while the pan heated up. I made a batch last Sunday where I poured the first one right after mixing and it came out fluffy for once. Anyone else have a random cooking habit that was messing things up?

smashing the lumps out of my batter way too aggressively" haha that's literally me, I used to beat the hell out of pancake batter thinking smooth = better. But I actually saw this Alton Brown video once where he said overmixing develops the gluten and makes them tough, not just flat. So now I leave the lumps alone and just fold it a few times, way fluffier results.

Oh you mean letting the batter rest? That's the exact mistake I was making for months. I thought I was being smart letting it sit and relax or whatever. Turns out you want those bubbles fresh and ready to go. I also figured out I was smashing the lumps out of my batter way too aggressively. Like I was trying to punish it or something.
