My neighbor's bokashi bin smelled so bad I almost gave up on apartment composting

I was visiting my friend Maria's place in Brooklyn last month and her bokashi bucket reeked of rotten milk - turns out she wasn't draining the liquid every few days. Has anyone else had to ditch a method because the smell got too strong before you figured out the fix?

Maria's issue sounds familiar. My buddy Dave tried bokashi in his tiny studio and the smell got so rank his super threatened to evict him. Turned out he was mixing in too much dairy and not enough carbon stuff, like shredded paper or dried leaves. We joked it smelled like a science experiment gone wrong, but once he fixed the balance (and started draining regularly), it was night and day.
