My bokashi bin started reeking after a few days

I thought bokashi was supposed to be odorless for apartment living. Mine has a sharp, sour smell that fills the room. Is this normal, or did I mess up the layers?

Honestly, that sharp smell might just be the bokashi doing its thing. Tbh, breaking down food isn't always pretty, and a sour note doesn't mean it's gone wrong. I've had mine get pretty strong before it settled down. Unless it's like rotting garbage bad, I wouldn't worry too much. Just check your layers are packed right and you're using enough bran.

Ever notice how lots of good processes, like pickling or compost, have a funky middle stage?

Sounds like your bin is pickling itself.
